Ingredients

  • 4 to 5 Large Taters - diced
  • 1 Tbsp Ginger - grated
  • 1 Tbsp Garlic - minced
  • 2 Tbsp Cooking Oil
  • 1 Tbsp Black Mustard seed
  • 2 Tbsp Lemon Juice
  • 2 tsp Salt
  • 1 tsp Pepper
  • 1/2 Cup Cilantro leaves - chopped
  • Spices
  • 5 Curry leaves - optional
  • 1/2 tsp Chili powers / Cayenne - up to 1 tsp
  • 1 Tbsp Coriander powder
  • 1/2 Tbsp Cumin powder
  • 1 tsp Turmeric powder

Preparation

Step 1

Boil Potatoes
1. Peal, and cube potatoes into bite size pieces.
2. Boil in a pot of water for 10 minutes or until the potatoes are soft but not mushy.
3. Drain and keep warm.

Saute
1. In a large saute pan or fry pan.
2. Add oil on medium-high heat.
3. Carefully add mustard seeds and let them crackle.
4. Add curry leaves (optional).
5. Followed by ginger and garlic - stir on low heat.
6. Add in the spices and 2 tbsp of water.
7. Cook the spices for a minute on low until fragrant but do not burn.
8. Add in the potatoes. Toss them gently to coat with all the spices.
9. Cook for a minute on medium-low tossing so it's all well coated.
10. Add lemon juice and cilantro.
11. Taste and adjust seasoning.
12. Serve with more sprinkled cilantro
