Ingredients
- 1 large egg
- 1/2 tsp. dry mustard
- 1/4 tsp. tabasco sauce
- 9 saltine crackers, crushed
- 8 oz. crab meat
- 1 scallion, finely chopped
- 2 1/2 tsp. grated lemon zest
- 1/4 c. chopped parsley
- Black pepper
- 2 tbsp. butter
- 1/4 c. mayo
- 1 tbsp. lemon juice
- 1 tbsp. capers, rinsed and chopped

Preparation
Step 1
Heat broiler. In a large bowl, whisk together the egg, mustard and tabasco. Stir in the cracker crumbs.
Add the crab meat, scallion, 1 1/2 tsp. lemon zest, half the parsley and 1/4 tsp. pepper. Toss to combine. Shape the mixture into cakes, about 1.2 in thick. Place on a greased baking sheet.
Put a thin pat of butter on top of each cake and broil for 4-6 minutes until cooked through.
In another small bowl, mix the mayo, lemon juice, capers, remaining lemon zest and parsley. Serve with the crab cakes.
