Ingredients

  • Salad:
  • 1 (16 oz) pkg romaine lettuce, thoroughly washed
  • 1 (6 oz) block Swiss cheese, shaved
  • 1 c roasted, salted cashews
  • 1 / c sweetened dried cranberries
  • 1 large apple, thinly sliced
  • 1 large pear, thinly sliced
  • Lemon-Poppy Seed Dressing:
  • 2/3 c light olive oil
  • 1/2 c sugar
  • 1/3 c fresh lemon juice
  • 1-1/2 Tbsp poppy seeds
  • 2 tsp finely chopped onion
  • 1 tsp Dijon mustard
  • 1/2 tsp salt

Preparation

Step 1

Salad:

Toss together the salad ingredients in a large bowl; serve with Lemon-Poppy Seed Dressing.

Dressing:

Process the oil and remaining ingredients except the seeds in a blender until smooth. Stir in the poppy seeds.

Store in an airtight container in the refrigerator for up to 1 week; serve at room temperature.
