Muffins or Coffee Cake Using Biscuit Type Baking Mix

Ingredients

• 2 cups Baking Mix
• 3 Tbsp. sugar
• 3/4 cup milk
• 1 egg (slightly beaten)
• 2 Tbsp. melted shortening.

Preparation

Step 1

Pre Heat Oven to 350 degrees
Combine all ingredients. Stir well. Batter will be lumpy.

OFFEE CAKE

Preheat oven to 350 degrees F.

Prepare the muffin recipe on the box (recipe above) and spread into prepared(greased) 8-inch square pan.

Cover the top of the muffin batter with the following:
1/4 cup sugar
1 Tbsp. Jiffy Baking Mix
2 tsp. cinnamon
2 Tbsp. soft butter
1/2 cup chopped nuts

Blend the above ingredients and sprinkle over the batter.

Bake 25-30 minutes. Serve warm.
