Spicy Nacho Bake

This layered Southwestern casserole is one of my favorites...i just love the flavors and especially the texture of the chips as they meld with the other ingredients!

Ingredients
- 1 pound ground beef or ground turkey
- 1 large onion, chopped
- 1 large green pepper, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (28 oz.) diced tomatoes, undrained
- 1 can (15 1/2 oz.) hot chili beans
- 1 can (15 oz.) black beans, rinsed and drained
- 1 can (11 oz.) whole kernel corn, drained
- 1 can (15 oz.) tomato sauce
- 1 envelope taco seasoning
- 1 bag (12-13 oz.) spicy nacho tortilla chips
- 2 cups shredded cheddar or Velveeta cheese

Preparation
Step 1
In a Dutch oven or large skillet, cook the beef, onion, green pepper, salt and pepper over medium heat until meat is no longer pink; drain. Stir in the tomatoes, beans, corn, tomato sauce and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes.
In a greased 13 x 9 in. baking dish, layer 1/3 of the chips and 4 cups of meat mixture. Follow with 1/3 of the cheese. Repeat layers. Top with remaining chips and the cheese. Bake, uncovered, at 350 degrees for 20-25 minutes or until golden brown.
