- 400 g Gragnano Paccheri Pasta
- 750 g Aubergines (purple ones preferably)
- 300 g Breadcrumbs
- 150 g Parmesan cheese
- 200 g Sliced Caciocavallo cheese or an alternative such as Edam
- 750 g Tomato passata
- 1 Onion
- 1 Clove garlic
- 2 tbspns Extra virgin olive oil
- 100 g Black olives in brine (chopped)
- Some Basil leaves
- Salt to taste
