Ingredients

  • 16 large mushrooms, whole
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 3 ounces cooked ham, finely chopped
  • 1/2 cup seasoned bread crumbs, the dried kind
  • 1/4 cup egg substitute, (or 2 eggs)
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt, or a little more
  • 1/4 teaspoon freshly ground pepper, or a little more

Preparation

Step 1

1. Remove Stems from mushrooms to make a pocket. Trim woody ends and coarsely chop the stems.
2. Heat a large non-stick skillet, sprayed with non-stick cooking spray. Add mushroom caps; cook 1-2 minutes, stirring constantly. Remove mushrooms from skillet. Add chopped stems, onion and garlic; cook, stirring frequently, 8-10 minutes until tender.
3. Preheat oven to 350~F. Spray an 11 X 17" baking pan with nonstick cooking spray.
4.Remove skillet fromheat. Stir in ham, bread crumbs, egg substitute, cheese, parsley, oregano, salt and pepper. Spoon mushroom mixture evenly into caps. Place mushroom caps filling side up in baking pan. Bake 25 to 30 minutes until browned.
