Ingredients
- 2 - 3 lbs boneless pork butt / shoulder
- 1 tsp black pepper
- 1 tsp kosher salt
- 1 tsp ground cumin
- 1 tsp thyme
- 1 tsp rubbed sage
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp ground mustard
- 1 tsp garlic powder
- 2 tbs vegetable oil
- 16 - 20 oz bottle root beer
- 1/2 cup barbecue sauce

Step 1
Preheat oven to 325 degrees. Spray roasting pan with cooking spray.
In a small bowl, mix pepper, salt, cumin, thyme, sage, chili powder, paprika, ground mustard, and garlic powder. Rub pork with an even coating of the seasoning mix.
In large skillet heat oil over medium high heat. Sear pork 4 minutes on each side. Transfer to the roasting pan.
Add 1 cup of root beer to the skillet stirring gently to release browned bits, about 2 - 3 minutes. Pour the root beer mixture over the pork. Add slight amount of root beer, enough that liquid comes up about 1/3 of the way up the meat.
Cover and place in oven. Bake for 1 hour. Flip the meat over, cover, return to oven, and bake for another hour. Cut the meat into large chunks. Cover and bake for another hour. Shred meat and add more root beer if necessary and barbecue sauce. Bake for another 30 minutes to thicken sauce.
