Ingredients

  • 2 teaspoons peanut oil
  • 8 ounces cole slaw mix
  • 8 ounces brocoli slaw mix
  • 1 tablespoon soy sauce, low sodium
  • 1 teaspoon chili -garlic sauce
  • 1/2 teaspoon dark sesame oil
  • 1/2 teaspoon splenda, or sugar
  • 8 egg roll wrappers 6 inch

Preparation

Step 1

Heat oil in large skillet over medium high heat. Add the coleslaw and the brocoli slaw and cook stirring frequently until softened, about 4 minutes. If the mixture seems too dry, add a little water. Add the soy sauce, chili sauce, sesame oil, and spleda or sugar. Cook over medium heat until the flavors are blended about 3 more minutes. Set aside and cool slightly.

Preheat oven to 350 dgress and spray baking sheet with cooking spray.

Lightly moisten edges of egg roll wrapper with water. Place a scant 1/4 cup filling in the center. Fold in the sides then roll up completely to enclose filling. Place the roll seem side down, on the baking sheet. lightly spray the roll with non-stick spray. Repeat with the remaining egg roll wrappers, filling, and non-stick spray to make 8 rolls. Bake the rolls until light dolden, 20 to 25 minutes.
