Ingredients

  • 2 eggs
  • 1 T Dijon
  • 2 1/4 Parmesan
  • 1 cup dried bread crumbs
  • 1/2 t kosher salt
  • 1/4 pepper
  • 1 lb chicken
  • 6 T olive oil

Preparation

Step 1

Whisk egg and mustard together. Separate bowl - combine crumbs, salt, Parmesan, and pepper. Rinse chicken and pat dry. Dip into egg then into bread crumbs. Heat 2 T oil - add cutlets. Cool through about 3-5 minutes per side.

Serve with lemon and bib lettuce salad.
