Ingredients
- 4 cups from 1 small, fresh, juicy-ripe pineapple, diced
- 2 Tbsp. jalapeno pepper, minced
- 1/4 cup minced green onion, including green tops
- 3 Tbsp. chopped fresh cilantro
- 1 Tbsp. corn or vegetable oil
- Juice of 1 large lime (3 Tbsp)
- salt and pepper

Step 1
Cut the top and skin off pineapple and remove the eyes and core. Finely dice the friut and place it in a glass bowl. Remove the steam and seeds from jalapeno and mince, then add it to the pineapple. Add green onions, cilantro, oil and lime juice. Toss to mix completely. Season with salt and pepper.
Chill at least 1 hour before serving to allow flavors to meld.
Makes about 4 cups
