Jalapeno Pimiento Cheese Spread

Who knew homemade pimiento cheese was soo easy to make! Traditionally, you think of it as a sandwich spread, but it also makes great appetizers when served on celery sticks or an assortment of crackers. I've also used it in deviled eggs and grilled cheese sandwiches.

Ingredients
- 1 (3 oz) package cream cheese
- 1/4 cup mayo, or more as needed
- 1/4 teaspoon black pepper
- 1/8 teaspoon salt
- 1/8 teaspoon garlic salt
- Cayenne pepper, to taste (optional)
- 1 (8 oz) package Sharp cheddar cheese (or Extra Sharp), shredded
- 1 (4 oz) jar diced pimientos, drained well
- Diced jalapeno peppers, to taste (optional) (I used 2 Tbls. diced Trappey's pickled jalapeno slices from jar)

Preparation
Step 1
In a medium bowl and using hand mixer, beat the first six ingredients until smooth. Beat in the shredded cheese, pimientos, and diced jalapenos if using, beating until desired consistency is reached. (I like to leave mine a little chunky).
Cover and refrigerate.
