Ingredients

  • 8 eggs
  • 1/4 lb sliced corned beef, chopped
  • 2/3 c grated Swiss cheese
  • 1/2 c drained sauerkraut
  • 1 tbsp mustard
  • 4 tbsp butter, melted
  • 4 slices rye toast
  • 1 tbsp chopped fresh dill

Step 1

In bowl, whisk eggs. Stir in next 4 ingredients; season. In skillet, cook egg mixture in butter over high stirring occasionally, until set, 2 to 3 minutes. Divide among soasts; top with dill.
