Pepper Crusted Beef Tenderloin with Gremolata

Ingredients
- 4, 4 oz., beef tenderloin steaks, trimmed
- 2 t black pepper
- 1/2 t kosher salt, divided
- 4 t olive oil, divided
- 1/4 C chopped parsley
- 3T chopped cilantro
- 1 1/2 t chopped garlic
- 1 t chopped fresh oregano
- 1/2 t grated lemon
- 1 T lemon juice
- 1/4 t crushed red pepper

Preparation
Step 1
Coat each filet with thin coat of olive oil. Sprinkle evenly with pepper & 1/4 t salt.
Heat large oven proof skillet over med hi heat. Add 1 t oil; swirl to coat. Add steaks to pan & cook for 3 min. each side or until desired degree of doneness.
Combine remaining T oil,, salt, parsley & remaining ingredients in small bowl; stirring with a whisk.
Serve with steak
