DEEP DISH PIZZA CASSEROLE

Ingredients

- 1lb. lean ground turkey
- 1 onion chopped
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 green pepper (or sweet pepper) chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon olive oil
- 16 turkey pepperonis cut into smaller pieces
- 4 flour tortillas (I used Mission brand lower carb)
- 1 24oz. jar pasta sauce (I used Classico brand marinara)
- 1 cup shredded part skim mozzarella cheese
- ¼ teaspoon crushed red pepper flakes
- 2 teaspoons minced garlic
- 2 tablespoons grated parmesan cheese

Preparation
Step 1
Preheat oven to 400 degrees. Add olive oil to a large skillet and bring to medium temperature (about 2 minutes). Add onions and peppers and sauté for 5 minutes. Add ground turkey and minced garlic and cook until meat is no longer pink (crumbling as you go). Add salt, pepper, garlic powder, onion powder, Italian seasoning, crushed red pepper flakes, parmesan cheese and stir. Turn temperature to low and add pasta sauce (reserve 2 tablespoons of sauce for bottom of casserole dish). Remove from heat and make an assembly line with your remaining ingredients. Spray a round oven safe baking dish with cooking spray (make sure dish is deep). Add remaining 2 tablespoons of pasta sauce to bottom of baking dish. You are going to be making 4 layers, so try to eyeball the ingredients to use 4 times. Add flour tortilla to bottom of casserole dish and top with ¼ of the meat mixture, next add ¼ of the cheese, ¼ pepperoni and repeat until you’ve built four layers. Cover with foil and bake in oven for 20 minutes. After 20 minutes remove foil and place under broiler for 3 minutes. Remove and let cool 10 minutes. Use a knife and divide into 6 pieces.
