Ingredients
- Dressing:
- 2 tsp salt
- 1 tsp pepper
- 1/2 c red wine vinegar
- 6 tbsp corn oil
- 1/4 c sugar
- Salad:
- 4 or 5 mandarins, peeled and separated
- 4 skinless, boneless chicken breasts, cooked and chopped
- 1 head iceberg lettuce, cored and chopped
- 1 c petite frozen peas
- 1/2 c chopped cilantro
- 1/2 c toasted slivered almonds
- 1/4 c toasted sesame seeds
- 2 c maifun rice noodles, cooked per package instructions

Preparation
Step 1
Dressing: In a small bowl, whisk together all ingredients. Refrigerate until ready for use. Whisk again before use.
Salad: In a large bowl, toss together all ingredients except noodles. Pour dressing over salad to taste and toss well. Stir in noodles. Serve immediately.
