Ingredients

  • Topping (optional):
  • 2 chicken breasts
  • 4 tsp Cajun seasoning
  • 2 TBS olive oil
  • 2 TBS unsalted butter
  • 3 garlic cloves (minced)
  • 1-2 cups heavy cream
  • 1/2 tsp lemon pepper seasoning
  • 1/2 cup shredded Parmesan (fresh)
  • 1/2 tsp salt
  • 16 oz penne pasta
  • 2 roma tomatoes (seeded & diced)
  • 2 TBS fresh chopped green onions (tops only) (optional)
  • 1/4 cup fresh grated Parmesan or Asiago cheese (optional)

Preparation

Step 1

Prepare pasta as directed to al dente. Drain.

Cut chicken breasts into 4 pieces. Pound each to 1/4" thickness. Sprinkle both sides of each with Cajun seasoning and rub in.

Saute chicken in large skillet with olive oil or grill, turning when necessary.

In second large skillet, melt 2 TBS butter over medium heat. Saute garlic until fragrant (1-2 minutes). Stir in 1 cup heavy cream, lemon pepper seasoning and salt. Whisk 1-2 minutes. Add Parmesan, whisking another 1-2 minutes until cheese is melted. If cheese is too thick, stir in additional heavy cream. Stir in pasta, gently toss to combine.

Slice cooked chicken into strips. Spoon pasta mixture onto four plates. Place each sliced chicken piece on each plate. Top with spoonful of diced tomatoes, green onion, and grated cheese.

Serve with garlic bread or Texas toast (optional).
