Ingredients
- 1 15 oz. can black beans
- 1 15 oz. can black eyed peas
- 2 11 oz. cans shoe peg corn
- 1 cup green pepper
- 1 cup red pepper
- 1 cup celery
- 1 cup red onion
- Dressing
- 3/4 cup canola oil
- 1/2 cup cider vinegar
- 1/2 cup sugar
- 1/4 tsp. pepper
- 1/2 tsp. salt

Step 1
Drain and rinse the black beans and black eyed peas. Add the shoe peg corn that has been drained. Chop small and add the green abnd red peppers, celery, and onion.
Mix the dressing ingredients and add to the beans and vegetable mixture.
Serve with nacho chips or fritos.
Keeps a long time in the refrigerator.
