Ingredients
- 1 head iceberg lettuce, torn
- 1 head of chickory lettuce, torn
- 2 scallions, chopped
- 1 (6oz) can black olives, drained and pitted
- 1 (2oz) can anchovies, drained (optional)
- 2 cucumbers, thinly sliced
- 2 large tomatoes, chopped
- 8 oz crumbled feta cheese
- 1/2 c olive oil
- 3 T red wine vinegar
- 1 T dried oregano
- Salt, pepper

Combine solid ingredients. Combine oil, vinegar, and oregano in a small bowl. Season to taste with salt and pepper
