Ingredients
- 1 box plain yellow cake mix
- 1 box vanilla instant pudding
- 2/3 cup of orange juice
- 1/2 cup vegetable oil
- 4 lg eggs
- 2 tsp ground cinnamon
- 3 cups grated carrots
- 1/2 cups raisins
- 1/2 cup chopped pecans
- (Frosting)
- 1 pk cream cheese roomtemp
- 3 cups powdered sugar
- 2 tbs orange juice
- 1 tbs orange zest
Preparation
Step 1
Bake at 350 in middle of rack in oven for 30 to 35 min 2 round 9 inch cake pans
Place cake mix, pudding,2/3 cups orange juice, 1/2 cup vegetable oil,4 eggs,2 tsp cinnamon and mix together with blender for app. 1 to 2 min.scrape down sides and mix for another 2 min.batter will be thick. Fold in 3 cups grated carrots,and 1/2 cup of raisins,and pecans.mix together.Pour batter in both pans equally and put in oven middle rack 350 for 30 to 35 min.Remove and let cool for 10 min on cooling rack.
Orange cream cheese frosting
1 pk of cream cheese at room temp.1 stick butter
