Ingredients

  • Cookies:
  • 1/2 cup butter or margarine, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • Icing:
  • 1 1/2 cups sifted powdered sugar
  • 1 egg white
  • Food coloring
  • Colored sugar
  • Candies
  • Egg Yolk Paints:
  • 1 egg yolk
  • 1 tsp water
  • Food colors

Step 1

Cookies: With electric beaters, cream butter and sugar until light and fluffy. Beat in egg, lemon juice and vanilla. Combine dry ingredients, gradually beat into butter mixture until well blended. Tint with food coloring if desired. Divide dough in half; flatten into a 1" disc and wrap in plastic wrap. Refrigerate until firm, 2 hours or longer.

Heat oven to 375 F. On a floured surface roll dough 1/8" thick. Cut with a 3" cookie cutter. Place 1" apart on ungreased cookie sheets. (If using Egg Yolk Paints, paint designs on cookies before baking).

Bake 8 - 10 minutes until lightly browned around edges. Cool on a rack.

Icing: Beat sifted powdered sugar and egg white 3 to 5 minutes until icing is glossy and of piping consistency. Add a few drops of water if icing is too stiff; more powdered sugar if too thin. Tint with food coloring. Pipe icing using a decorator tip, or spread icing and decorate with colored sugar, candies, etc.

Egg Yolk Paints: Mix egg yolk and water. Divide mixture among several small cups and tint with food colors. If paint thickens stir in a few drops of water. Paint designs on cookies before baking.
