Ingredients
- 1 Lb orzo
- 2 Tbsp unsalted butter
- 1 onion,chopped fine
- 2 garlic cloves,minced
- 3 1/2 Cups low-sodium chicken broth
- 1/2 Cup white wine
- Salt and pepper
- 1 1/2 Cup frozen peas
- 2 Tbsp finely chopped fresh mint
- 2 Tsp grated zest plus 2 Tsp juice from 1 lemon

Preparation
Step 1
1)Toast orzo in large skillet over medium heat,stirring frequently,until golden brown,about 8 minutes;transfer to bowl. Melt butter in empty skillet. Cook onion until softened,about 5 minutes. Add garlic and cook until fragrant,about 30 seconds.
2)Add broth,wine,tossed orzo and 3/4 Tsp salt to pan and bring to boil. Reduce heat to medium-low and simmer,stirring every 5 minutes until liquid has been absorbed and orzo is tender,about 15 minutes. Stir in peas,mint,lemon zest and lemon juice and cook until heated through,about 1 minute. Season with salt and pepper. Serve.
