BROWN****Brown Rice with Cilantro and Lime 1 Picture

Ingredients

  • 6 tablespoons (1/2 rice cooker cup) long (basmati) or short (Lundberg's Organic Short Grain) grain brown rice
  • required amount of chicken broth
  • 1 teaspoon olive, avocado or sesame oil
  • pinch of salt
  • pinch of ground cumin
  • juice and zest of one lime
  • 2 - 3 tablespoons finely chopped fresh cilantro

Preparation

Step 1

Rinse and drain rice in rice cooker bowl until water runs clear. (you may not think you need to do this with brown basmati but recently I had a very starchy experience)

Add broth, oil, salt and cumin to rice in bowl and cook one cycle on brown rice setting (about 1 1/2 hours).

When done, fluff with fork and mix in lime zest and juice and minced cilantro. Taste and adjust seasoning if required.
