BROWN****Brown Rice with Cilantro and Lime

06/05/16 - Good basic recipe although I think I'd prefer it with basmati (I used the short-grain brown the first time)

Ingredients
- 6 tablespoons (1/2 rice cooker cup) long (basmati) or short (Lundberg's Organic Short Grain) grain brown rice
- required amount of chicken broth
- 1 teaspoon olive, avocado or sesame oil
- pinch of salt
- pinch of ground cumin
- juice and zest of one lime
- 2 - 3 tablespoons finely chopped fresh cilantro

Preparation
Step 1
Rinse and drain rice in rice cooker bowl until water runs clear. (you may not think you need to do this with brown basmati but recently I had a very starchy experience)
Add broth, oil, salt and cumin to rice in bowl and cook one cycle on brown rice setting (about 1 1/2 hours).
When done, fluff with fork and mix in lime zest and juice and minced cilantro. Taste and adjust seasoning if required.
