Makes about 12 crepes. Kids like the crepes but not the warm fruit inside. Put fruit on top for them. Can use any kind or combination of fruit.

  • 1/2 cup flour
  • 1/4 tsp salt
  • 2 eggs lightly beaten
  • 1 cup milk
  • 2 tbls Olive Oil
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla
  • Filling
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • 1 cup fresh strawberries, quartered
  • 1 tbl Splenda
  • 2 Bananas, cut into 1/2" slices

Preparation

Step 1


In mixer whisk flour, salt, eggs, milk,vanilla and oil until smooth spray 6" saute pan with PAM and heat over medium high heat.
Add 2-4 tbls of batter and swirl around pan quickly, cook 30 seconds until set.
Using red big spatula, turn over and cook for 5 seconds.
Remove and place on wax/parchment paper cool to room temp and then stack.
Wrap in plastic for up to 3 days.
Recipe: Filling
Combine all ingredients in a sauce pan over medium-low heat.
Cook 4 minutes. Stir occasionally. place dollop of fruit on top of one crepe, roll crepe, sprinkle with cinnamon. Top with low-cal syrup.
