Christmas Nut Cake

There is almost no filler in this nut cake. This is really a nut-filled cake with just a little batter.

Ingredients
- 2 pounds whole pitted dates
- 2 pounds whole walnut meats
- 1 pound Brazil nuts
- 8 oz. dried apricots, cut up
- 5 large eggs
- 1 c. flour
- 1 c. sugar
- 1 t. salt
- 1 t. baking powder
- 8 oz. maraschino cherries, drained
Details
Preparation
Step 1
Combine dry ingredients with whole nuts & fruits
Beat eggs and vanilla and add to the nut and dry ingredient mixture
Prepare 3 loaf pans; grease the bottoms, line with baking paper and grease the paper
Pour ingredients into the three loaf pans
Bake at 250 degrees for 1 1/2 to 2 hours
Cut with a very sharp knife
