Ingredients
- 2 lbs of Yukon Gold Potatoes
- 1 Cup Chicken Broth
- 1 Cup Water
- 2 Tablespoon White Wine Vinegar
- 1 Tablespoon Sugar
- 1 Tablespoon Salt
- 3/4 Red Onions
- 1/4 Cup Pickles chopped really small
- 1/4 Cup Vegetable Oil
- 1 Tablespoon of Dijon Mustard with seeds in it.

Preparation
Step 1
Cut 2lbs of Yukon potatoes into 1/2" cubes. Cook these potatoes in 1 cup of chicken broth, and 1 cup of water. Add 1 tbsp of white wine vinegar, 1tbsp of sugar, and 1 tbsp of salt. Boil for 15 minutes. Save the potato water. Should be 1/2 cup.
Pour potato water into bowl, add 1/4 cup of vegetable oil, 1 tbsp of Dijon mustard, whisk together and add a pinch of salt, then add 1/2 cup of potatoes and mash them with water.Then add onions and pickles 2tbsp of chives, mix all together and let cool to room tempature.
