Ingredients
- Dried Fruit Variation, add when adding bran mixture to flour mixture:
- 1 C buttermilk
- 1 C natural wheat bran
- 1 1/4 C flour
- 1/4 C brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 egg, fork-beaten
- 1/4 C cooking oil
- 1/4 C fancy (mild) molasses
- 1 tsp vanilla
- 1/2 C chopped dried fruit
- 1/2 C chopped nuts

Preparation
Step 1
Stir buttermilk into bran in medium bowl. Let stand ffor 10 minutes.
Measure next 5 ingredients into large bowl. Stir. Make a well.
Stir remaining 4 ingredients into bran mixture. Add to well. Stir until just moistened. Fill 12 greased muffin cups 3/4 full.
Bake in 375 oven for 20 - 22 minutes until pick comes out clean. Let stand in pan for 5 minutes before removing to wire rack.
