Ingredients

  • 4 russet potatoes, sliced into 1/4 inch slices
  • 1 onion, finely diced
  • Salt and pepper to taste
  • 3 tablespoons butter plus 1 tablespoon to sauté the onions
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 2 cups milk
  • 1 1/2 cups shredded Cheddar cheese (6 ounces)

Preparation

Step 1

Preheat oven to 400 degrees. Butter a 1 quart casserole dish.
Sauté the onions in a tablespoon of butter and set aside.
In a medium saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk until the flour is cooked, about 2 minutes. Stir in milk, slowly, whisking as you add. Cook until mixture has thickened. Stir in cheese, all at once and continue stirring until melted, about 30 to 60 seconds.
Layer half the potato slices on the bottom of the pan. Pour about half the cheese sauce on top.
Spread out the sauté onions on top.
Add the rest of the potatoes and pour the remaining cheese sauce on top. (If you want, you can add additional cheese on top of this.)
Cover with foil and bake 1 1/4 hours. Uncover, and cook another 15 minutes or until the top is browned and bubbly.
