Ingredients

  • 1 egg
  • 2 TBS lemon juice
  • 2 tsp minced garlic
  • 1/2 tbs fresh parsley
  • 1/2 tsp salt and pepper
  • 1/2 c breadcrumbs
  • 1/3 c parmesan cheese
  • 4 boneless chicken breasts
  • baby potatoes quartered
  • green beans
  • peppers
  • 1/2 c butter melted
  • 2 tsp minced garlic
  • salt

Preparation

Step 1

Preheat oven to 400. Line baking tray with foil and coat with cooking spray.
In large bowl, whisk together egg, lemon juice, garlic, parsley salt and pepper.
Dip chicken into egg mixture, cover and allow to marinade for 30 minutes to an hour.
In another bowl, combine the breadcrumbs and parmesan cheese.
Dredge the egg coated chicken in the breadcrumb/parm cheese mixture. Pressing to coat.
Place chicken in a single layer. Mix together the butter, 2 tsp garlic and salt to taste. Pour half over the potatoes. Toss to coat.
Bake in preheated oven for 15 minutes.
Remove the baking tray from the oven and carefully flip chicken. Move the potatoes to one side and place the other vegetables around the chicken. Pour remaining garlic butter and return to the oven to broil on medium high heat for 10 minutes or until chicken is golden and crisp and potatoes are cooked thoroughly.
