Ingredients
- 2 limes, juiced
- 3 T. canola oil
- 2 garlic cloves, chopped
- 1 jalapeno pepper, chopped
- 1 T. fresh cilantro, chopped
- 1 t. ground cumin
- 1 t. salt
- 1/2 lb. sirloin steak or chicken breast, or a combination of the two
- 1 med. onion, sliced
- 1 sm. green bell pepper, sliced into strips
- 1 sm. red bell pepper, sliced into strips
- 6 fajita-sized tortillas

Step 1
Mix together the marinade ingredients (lime thru salt). Place meat in non-reactive dish and pour marinade over. Refrigerate 1 hour or longer.
When ready to cook, remove meat from marinade and discard marinade. Grill or broil the meat (keep steak medium rare; cook chicken thoroughly). Let rest for a couple of minutes before slicing thinly. Place meat in a serving dish.
Meanwhile, sauté vegetables in small amount of canola oil until cooked softly through. Transfer to another serving dish.
Place tortillas on a microwave-safe plate between dampened paper towels; microwave for 1 minute on high. Place steamed tortillas in a tortilla server or wrapped in a dish towel to keep warm.
At the table, each person assembles their own fajita by placing meat and vegetables onto a tortilla, then adding salsa fresca, guacamole and/or sour cream. Roll loosely and enjoy.
