Ingredients
- 1/4 cup butter, room temperature
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 1 1/2 teaspoon vanilla
- 1 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup Trader Joe's Organic Creamy Peanut Butter
- 6 oz Trader Joe's Semi-Sweet Chocolate Chips
- 3/4 cup walnuts or pecans, roughly chopped
- 3 cups Trader Joe's Rolled Oats

Step 1
Preheat oven to 350°F.
In a large bowl, cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time until combined. Add vanilla, baking soda, and salt; mix well. Add peanut butter and mix until incorporated. Stir in oats, chocolate chips and nuts.
Drop by rounded tablespoons onto a parchment lined baking sheet about 2 inches apart. Bake for 10-12 minutes until golden brown around the edges. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
*Note: The cookies will be very soft out the oven. Do not over bake, otherwise cookies will not be as chewy.
