Perogies Casserole is quick and easy to make -- perfect to make ahead and pop in the oven when you get home. Serve with a green salad.

Ingredients

  • 16 - 20

    frozen perogies, I use Cheemo brand

  • ½

    onion, chopped

  • 1

    tablespoon butter

  • ½

    red pepper, chopped

  • 1

    cup sliced mushrooms

  • ½

    cup cooked ham, chopped

  • ¼

    cup milk

  • 1

    (10½ ounce) can cream of mushroom soup

  • 2

    tablespoons bacon bits

  • ½

    cup cheddar cheese, grated

Directions

Preheat oven to 350 degrees. In a skillet over medium heat, melt butter, saute onions, red pepper and mushrooms. In a medium casserole dish, combine perogies, onion, pepper and ham. Mix milk and soup in a separate dish. Pour over casserole. Top with bacon bits and shredded cheese. Bake for 35 minutes at 350 degrees Fahrenheit.
