Ingredients

  • Wash beets very well using either uniform size or small beets. Cook the whole beets in water until tender starting in cold water. Drain and slip off skins in cold water.

Step 1

Prepare 1 pint vinegar; add 1 cup sugar (white or brown), and 1 pint of boiling water, and 1 tsp salt; 1/2 tbsp whole cloves and bring to boiling point and drop in beets. There should be enough liquid to cover beets; as soon as boiling point is reached pack into bottles and cover with boiling liquid and seal.
