  • 2-lb each whole lobster, killed humanely by seafood shop
  • 2 Tbls. salt

Preparation

Step 1

Add salt to a large stock pot of boiling water.
Using tongs, immerse the lobsters.
Bring water to boil, cover the pot and cook for 10-minutes.
Using tongs to life lobster partway out of pot, Insert an instant read thermometer in underside of the tail, lobster is cooked when temperature reaches 140 degrees.
Use tongs to remove lobster to cutting board to cool.

To remove the meat, turn lobster shell side down and use a large chef knife to cut a slice straight through the center meat of the tail section. Split sides apart by hand (shell may crack in half during this process), meat sections should pull out.
Next, remove the claws where they connect to the shell. Wrap a folded dishtowel and strike with a mallet to crack the shell. Pull the claw meat out.
