You can make the cakes up to a week in advance and store in your refrigerator. When cooking, take directly from the refrigerator and place in a pre-heated 425 degree oven for 13 minutes. Cool and unmold as above. Serve with Whipped cream, ice cream or both.

Ingredients

  • 6 oz. butter (1 1/2 sticks)
  • 8 3/4 oz. chopped dark chocolate
  • 3 whole eggs
  • 3 egg yolks
  • 1/2 cup granulated sugar
  • 1/2 cup all purpose flour

Preparation

Step 1

1. Preheat oven to 425 degrees (or 400 degrees for convection oven).

2. Butter and lightly flour 6 small ramekins or molds and set aside.

3. Melt butter and chocolate together and let cool.

4. Meanwhile, using an electric mixer on high speed, whip the eggs, egg yolks, and sugar for 10 minutes.

5. Reduce the beater speed and slowly beat in the flour, then add the chocolate and butter mixture and mix well.

6. Bake for 7-8 minutes, remove from oven and cool for 3 minutes.

7. Run knife around the edge and turn over and unmold onto each plate.
