Ingredients
- 4 chicken breasts, deboned
- 2 cans Cream of Chicken and Mushroom Soup
- 2 cans Ro-tel tomatoes
- 1 cup chicken broth
- 1 tbs. chili powder
- 1 small onion chopped
- 1 or 2 ribs celery chopped
- 1/3 cup bell pepper chopped
- 1 1 /2 cup grated cheese (cheddar, co-jack)
- Several yellow corn tortillas

Preparation
Step 1
Heat 1 tbs. margarine in a skillet and cook chicken quickly, remove chicken and add 1 tbs. margarine. Add onion, celery and bell pepper, saute briefly. Add the rest of the ingredients and heat until bubbly. In the meantime cut chicken into chunks. In 9x12 dish place a layer of torn tortillas then a layer of chicken, 1/2 the soup mixture, & 1/2 the cheese. Repeat.
Bake at 350 for 30 to 40 minutes or until bubbly.
