  • 266 grams superfine sugar
  • 54 grams light corn syrup
  • 1/2 cup water
  • 36 grams unsalted butter
  • 2 grams baking powder
  • 1.5 grams kosher salt
  • 216 grams walnuts, broken into pieces and toasted
  • Flaky salt, to finish

Preparation

Step 1

1. Prepare a small baking pan with heavily sprayed or buttered parchment. Set aside.

2. In a medium saucepan combine the sugar, light corn syrup, and water. Cook to a golden caramel color.

3. Whisk the butter into the sugar mixture.

4. Whisk in the baking powder and kosher salt to the mixture.

5. Stir in the walnuts.

6. Quickly spread the brittle over the prepared pan. Sprinkle the walnuts with flaky salt and let cool completely before using, approximately 2-3 hours.
