Ingredients
- 1/4 cup sugar
- 1/4 cup white wine vinegar
- 1/4 cup thawed cranberry juice concentrate
- 4 1/2 tsp. ground mustard
- 1/2 tsp. salt
- 1/2 tsp pepper
- 1/2 cup canola oil
- 1 med. ripe avacado
- 1 Tbsl. lemon juice
- torn romaine
- fresh baby spinach
- dried cranberries
- red onion, chopped
- 1/3 cup slivered almonds
Preparation
Step 1
In a small bowl, combine the first 6 ingredients. Gradually whisk in the oil
and set aside.
Combine the avocado and lemon juice. In large bowl, combine romaine, spinach,
cranberries, onion and avocado. Drizzle with 1/2 cup dressing. Sprinkle with almonds
. Serve immediately.
I make the dressing and store in the refrigerator. For 2 peoople I just use about 3 Tbsp.
