Ingredients

  • 1 C All Purpose Flour
  • 1 t baking soda
  • 1 t double acting baking powder
  • 1 t cinnamon
  • 1/2 t salt
  • 2/3 C vegetable oil
  • 1 C sugar
  • 2 beaten eggs
  • 1/2 to 1 C raisins
  • 1 1/2 C grated carrots

Preparation

Step 1

Sift Flour
Re-sift Flour with baking soda, baking powder and cinnamon

In a separate bowl combine oil, sugar and eggs. Once well blended, add to flour mixture. Again once combined, add carrots and raisins.

Bake in a greased and floured pan for about 85 minutes at 325.
