WAHOO/ONO****Seared Hawaiian Ono with Pineapple Ginger Salsa

By

06/05/16 - VVG for both, although I almost burned the fish while cooking it due to the marinade - keep that in mind and watch it closely or cook over a bit lower heat than you usually would. Salsa was nice. I served it over Cilantro Lime Brown Rice.

Preparation

Step 1

Marinade: Combine soy sauce, honey, sliced ginger, garlic and olive oil in a blender until smooth. (Alternately, grate ginger and garlic on a microplane to eliminate the need for the blender) Place fish and marinade in a ziplock bag or bowl for 20 minutes or up to 24 hours.

Salsa: Combine all ingredients and set aside. Refrigerate if making ahead and bring back to room temperature before serving.

Fish: Heat oil over medium high heat and place the fish in the skillet, saving the marinade. Cover with a lid and sear the fish, 4 minutes per side, then remove to a plate and set aside for a couple of minutes.

Pour the remaining marinade into the skillet and bring to a boil for 30 seconds, until it thickens.

Serving: Break apart the fish into shard. Plate some white or brown rice in a bowl, top with a couple of spoonfuls of salsa then the fish. Finish with the sauce.
