Ingredients

  • 1/2 cup low fat plain yogurt
  • 1/2 cup low fat sour cream
  • 1 teaspoon lemon juice
  • 1 clove garlic, pressed
  • 1/4 teaspoon dried oregano
  • 4 tablespoons milk
  • Pepper to taste
  • 8 cups mixed salad greens
  • 12 cherry tomatoes, halved lengthwise
  • 1/2 cup thinly sliced cucumber
  • 1/2 cup thinly sliced red onion, separated into rings
  • 2 1/2 teaspoons Greek seasoning
  • 1/4 teaspoon salt
  • Non-aerosol cooking spray
  • 1 1/4 pounds lean pork tenderloin, cut into 1/8-inch thick medallions

Preparation

Step 1

In a small bowl, combine yogurt, sour cream, lemon juice, garlic and oregano; blend well. Stir in enough milk to reach desired consistency for dressing. Cover and refrigerate while you get the salad together. In a very large salad bowl, gently toss together salad greens, tomatoes, cucumber and onion. Cover and refrigerate while preparing pork. In a small bowl or cup, combine Greek seasoning and salt; sprinkle mixture evenly over pork and gently rub it in. Coat a large skillet with cooking spray over medium-high heat; add pork and cook for 2 to 3 minutes or until tender and no longer pink. To serve, divide salad evenly among 4 dinner plates; arrange 1/4 of the pork on top. Drizzle 2 tablespoons of dressing over each salad. Sprinkle with black pepper, if desired. Serve remaining dressing on the side.

SERVING SUGGESTION: Serve sesame breadsticks on the side.
GLUTEN FREE: Make sure Greek seasoning is gluten free.
