Ingredients
- 400 g Granulated sugar
- 1/2 c Water
- 8 Egg whites at room temperature
- 454 g Unsalted butter at room temperature
- 1 tsp. Vanilla extract

Preparation
Step 1
1. Add sugar and water into a medium size sauce pan
2. Add egg whites and a pinch of cream of tartar into large mixing bowl with whisk attachment
3. Let sugar and water boil to 230* F
3. Begin to whisk egg whites until thick foam
4. When sugar mix reaches 240*F turn stove off and remove candy thermometer
5. Carefully pour the hot sugar mix into the mixer bowl very slow
6. Continue to whisk until bowl is room temperature.
7. Start adding room temperature butter 2 tbsp. at a time until all butter is added
8. Scrape bowl after last butter is added
9. Add vanilla extract or desire flavoring and continue to whisk until firm consistency
