Cornbread and Apple Dressing

Family favorite.
Add 1 c pecans, coarsely chopped if desired.
Assemble the dressing the day before but pour the broth on when ready to bake.

Ingredients
- 1 # sweet Italian sausage
- 5 tbs unsalted butter
- 1 c red pepper, finely chopped
- 2 c yellow onion, finely chopped
- 2 c celery, chopped
- 1 tsp salt
- 1/2 tsp pepper
- 4 c cornbread, crumbled
- 4 c bread crumbs (10 slices country bread)
- 2 Granny Smith apples. peeled, cored and diced
- 1/4 c parsley, fresh, finely chopped
- 2 tbs sage, fresh, chopped
- 2 tsp thyme, dried
- 1 c low sodium chicken broth

Preparation
Step 1
Heat oven to 350*. Remove the casings from the sausage and brown meat until crumbly and done, about 10 minutes.
Set aside and reserve 1 tbs fat.
Melt 2 tbs butter with the fat and add vegetables, salt and pepper. about 15 minutes. Add apples. Cook 5 minutes more. Combine with all other ingredients except chicken broth. Place in large baking pan and pour broth over the top allowing to soak in. Bake 30-35 minutes until golden.
