Ingredients

  • 2 1/2 tablespoons chili powder
  • 1 tablespoon ground cumin (Originally recipe called for 2 tablespoons of cumin and 1 tablespoon of ground coriander. )
  • 1 tablespoon sea salt
  • 1 tablespoon paprika
  • 1 tablespoon dark brown sugar
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon garlic powder
  • 1 slab of baby back ribs

Preparation

Step 1

Mix all the spices together. You will have more than you need, but it can be used on other meats.

Preheat oven to 300 degrees.

Apply 1/4 cup of dry rub on each side of the ribs. Work it inwith your hands until everything is covered. Place on a rack, bone side up. I used a cooling rack on top of a jelly roll pan.

Place the rib in the middle of the oven. After one hour, they will start to brown. After one hour, turn the pan around (NOT THE RIBS, JUST THE PAN.). After that, you will turn the pan around every 30 minutes for two more hours.

And, ta da, they are done. If you want, add barbecue sauce to the ribs at this point and broil or return to oven until hot.
