Southern Country Ham and Pecan Dressing

Change country ham to sausage.
Change pecans to walnuts.
Leave out gumbo powder and add 1 1/2 tsp crumbled thyme leaves and 1 c died cherries.
Add extra sage to taste.

Ingredients

  • 6 c brioche, cubed and toasted
  • 1 # country ham,cubed
  • 1 stick butter
  • 2 chopped white onions
  • 1/4 c chopped spring onions
  • 4 ribs celery, chopped
  • 3 tbs garlic, minced
  • 1/2 c parsley, fresh, chopped
  • 2 tsp sage, fresh
  • 1 tsp file gumbo powder
  • 1 c pecans, chopped and toasted
  • 1 c chicken broth
  • salt and pepper to taste

Preparation

Step 1

Toast the 6 c of bread cubes for 10-12 minutes at 325*. Transfer to a large bowl.
In a large skillet, melt 1 stick of butter. Saute vegetables for 10 minutes, until soft. Add to bowl. Add ham and the rest of the ingredients, except chicken broth. Mix until well combined.
Begin adding broth, mixing. Use just enough to moisten not to soak.
Bake at 325* for 25-30 minutes or until golden.
