Ingredients
- !2-14 # turkey, giblets removed
- 3 tbs evoo
- 2 lemons, each cut in half
- 1/2 c fresh oregano leaves
- 1/2 c fresh thyme leaves
- 1/2 c fresh rosemary needles
- 1/2 c torn fresh basil leaves
- 1/2 # (2 sticks) unsalted butter, cut into pieces
- 2 cloves garlic, minced
- 1 tbs paprika
- salt and pepper to taste
- 1 can chicken broth
- large roasting bag
- Preheat oven to 350*
- Rinse turkey under cold water and pat dry. Using your hands,carefully separate the skin, without removing it altogether, from the breast meat to form a pocket.
- Rub the breast meat under the skin with one tbs evoo. Squeeze juice from both lemons under the skin and over the breast meat. Place juiced lemons in the cavity. Rub herb mix under the skin and in the entire cavity. Add butter chunks as well.
- Rub remaining 2 tbs evoo over the entire bird, then sprinkle with paprika, and a generous amount of salt and pepper.
- Place 2-3 tbs all purpose flour in the roasting bag and shake. Place turkey in bag and add chicken broth.
- Roast turkey 3/12-4 hours or until meat thermometer inserted in deepest part of the thigh reads 175*.
- Let turkey stand 10-20 minutes before carving.
