Ingredients
- 6 medium summer squash, sliced (I used
- zucchini & crookneck)
- 1 medium onion, chopped
- 1 sleeve crackers, crushed (I used
- Ritz)
- 4 ounces grated cheese (I used chedder), (1 cup)

Preparation
Step 1
Steam prepared squash and onion until soft. (I microwaved it for about 10 min.)
Mash squash and onions and stir in crushed crackers.
Put half of squash/cracker mixture in a casserole dish.
Sprinkle half of cheese on top.
Repeat with another layer of squash/crackers and cheese.
Bake at 350 deg. for about 30 min.
