Ingredients

  • 4 medium carrots, peeled -- sticks
  • 2 tablespoons lemon juice, fresh
  • 2 tablespoons honey
  • 2 teaspoons unsalted margarine
  • 2 teaspoons lemon zest
  • 1/8 teaspoon ground coriander, optional
  • 1 tablespoon cilantro, chopped (optional)
  • 1/8 teaspoon pepper

Preparation

Step 1

1. In large nonstick skillet, combine carrots, juice, 2 tablespoons water, the honey, margarine, lemon zest and coriander; bring to a boil. Reduce heat to low; simmer, covered, 5 minutes, just until tender.
2. Uncover and increase heat to medium; cook stirring occasionally, 3 minutes, until most of the liquid has evaporated and carrots are glazed. To serve sprinkle with cilantro and pepper.
