  • 2 tablespoons margarine, melted
  • 3 medium potatoes, cut in eighths
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano, or tarragon
  • 1/4 teaspoon onion salt, or garlic salt
  • 1/8 teaspoon pepper

Step 1

Preheat broiler. Scrub potatoes and cut into eighths. No need to peel unless you want to. Stir basil, oregano, or tarragon; onion or garlic salt; and pepper into melted butter. Pour into a plastic bag. Add potatoes and shake to coat. Pour out onto a baking sheet in a single layer.

Place pan containing potatoes 3 inches from heat. Broil potaoes for 5 minutes. Turn over broil another 5 minutes more until tender.

Or bake bake in a 450 degree oven for 20 to 30 minutes.
